Watermelon Kiwi Agua Fresca

I don't normally share drink recipes but seeing that people love my rose milk tea and forbidden rice horchata, I decided to share a summer beverage today. What can be better than a refreshing watermelon kiwi agua fresca on 90-degree weather? Absolutely nothing. With a touch of mint and a lime sugar rim, this drink has it all. Add a splash of tequila or rum for a fun adult version.

Watermelon Kiwi Agua Fresca

Ingredients

  • 4 cups watermelon seedless rind removed
  • 1 cup kiwi peeled and cut into chunks
  • ½ cup ice
  • ¼ cup granulated sugar
  • zest of 1 lime
  • 1 lime thinly sliced
  • 4 mint leaves

Instructions

  • Blend together 4 cups watermelon with 1 cup kiwi and ½ cup ice until smooth. Strain the juice if desired.
  • Combine ¼ cup granulated sugar with the zest of 1 lime in a small bowl. Wet the rim of the glasses with a lime wedge and dip in the lime sugar. Add 2 slices of lime and 2 mint leaves per glass. Muddle until the mint and lime are slightly bruised and pour the watermelon kiwi agua into the glasses. Serve cold.

**Helpful tips and common mistakes

When I was thinking about how to make this watermelon kiwi agua fresca unique, I decided to make it like a cocktail. But there isn't actually any alcohol in the recipe so this drink is kid-friendly. (Of course, that can easily be remedied if you want to make this "happy-hour appropriate.")

All you need to make this recipe is fresh watermelon, kiwi, mint, and lime. The sweeter the watermelon and kiwi, the better because that means you don't need to add sugar to the actual drink.

Blend the watermelon with the kiwi and ½ cup of ice until smooth. If you're not a fan of the pulp, strain the juice.

Now give it a taste to see if you need to add sugar or not. If it needs a little sweetness, add sugar, or agave. Keep in mind that we're going to rim the glasses with lime sugar as well which will add to the overall sweetness.

Rim the glasses with the lime sugar, muddle some fresh mint with lime slices, and pour in that watermelon kiwi agua fresca. Now sit back, enjoy the weather, and relax with this refreshing beverage. Not a bad way to spend the day!
