Strawberry Cheesecake Swirl Brownies

Ingredients

  • ½ cup strawberries chopped
  • 4 ounces cream cheese softened
  • ¼ cup powdered sugar
  • 1 tablespoon egg beaten
  • ¾ cup all-purpose flour
  • 1 cup granulated sugar
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • cup cocoa powder
  • 1 teaspoon instant coffee
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ½ cup semisweet chocolate chips

Instructions

  • Preheat oven to 350 degrees F. Spray an 8-inch square baking dish with cooking spray.
  • Beat together ½ cup chopped strawberries with 4 ounces softened cream cheese, ¼ cup powdered sugar, and 1 tablespoon egg until smooth.
  • In a large bowl, combine ¾ cup flour with 1 cup sugar, ½ teaspoon salt, ½ teaspoon baking powder, ⅓ cup cocoa powder, and 1 teaspoon instant coffee.
  • In a separate bowl, whisk together ½ cup vegetable oil with 1 teaspoon vanilla, and 2 eggs. Add the wet ingredients to the flour mixture, stirring until smooth. Mix in ½ cup semisweet chocolate chips.
  • Spread ½ of the brownie batter in the bottom of the prepared baking dish. Spread all but ¼ cup of the cream cheese mixture on top of the brownie batter. Spread the remaining brownie batter on top.
  • Place dollops of the remaining ¼ cup cream cheese mixture on top and use a knife to make swirls. Bake for 40-45 minutes or until set. Let cool completely.
