A little mid afternoon snack: pepperonata with fresh mozzarella served with the olive walnut sourdough I made last week.
This week is going by so slowly for me (I know I know it's only Tuesday!) Because I'm counting down the days until vacation!! Headed to Spain for the first time. Anyone have some good recommendations? Would love to hear!

Pepperonata recipe:
1/4 cup extra virgin olive oil
3 bell peppers sliced
2 cups cherry tomatoes
2 cloves garlic thinly sliced
1 tbsp red wine vinegar
1 tbsp fresh oregano
Salt and pepper
8 ounces fresh mozzarella, sliced
2 tbsp fresh basil, chopped
Crusty bread for serving Combine all of the ingredients except mozzarella and basil in a saute pan and simmer on medium-low heat for 10-15 minutes or until the vegetables are soft. Garnish with basil and serve with fresh mozzarella and crusty bread.
